Preparation method
First, bring plenty of salted water to a boil in a large pot. Cook the penne al dente according to package instructions, then drain and set aside briefly.
Meanwhile, heat a large pan and let the olive oil get hot over medium heat. Add the finely diced onion and whole garlic cloves and sauté, stirring occasionally, for about 4–5 minutes until translucent.
Meanwhile, cut the bell peppers into pieces about 2 cm in size. Add them to the onion-garlic mixture in the pan and roast for another 5–6 minutes. Once everything has lightly browned, pour in the vegetable broth. Add the chopped tomatoes and oregano and let everything simmer over medium heat for about 12–13 minutes until the bell peppers are soft.
Chef's tip
Garnish each portion before serving with a few fresh basil leaves and drizzle with a little high-quality olive oil. A little freshly grated Parmesan also goes perfectly with it!
