Ein herrlicher Herbstklassiker aus der italienischen Traditionsküche: Süßlich-milde rote Zwiebeln werden sanft in feinem Olivenöl und Butter langsam karamellisiert, mit einem Spritzer Aceto Balsamico veredelt und mit frischem Thymian aromatisiert. Zusammen mit al dente gekochten Penne und frisch geriebenem Parmesan entsteht eine samtige, aromatische Sauce voll tiefer Würze.

Peel the red onions, halve them, and slice into thin half-rings. Peel the garlic and slice thinly. Pick the leaves from 3 sprigs of fresh thyme and roughly chop them, setting aside the remaining thyme for garnish.

Put a large pot with plenty of water on to boil for the pasta. If desired, keep pasta bowls warm in the oven at 60 °C.

In a wide frying pan, heat the olive oil together with 15 g of the unsalted butter over medium heat. Add the sliced red onions, a pinch of salt, and gently cook over medium to low heat for about 12–15 minutes until they are soft and gorgeously sweet and caramelised.

Chef's tip

Slow caramelisation is the secret: The red onions should never be fried over high heat. Gently cooking them over low to medium heat brings out their natural sweetness best.

Pasta water as a flavour carrier: The starchy cooking water combines the olive oil, melted butter, and Parmesan into a luscious sauce without any heavy cream.

Aromatic oven tip: For a lovely crunchy touch, toast 30 g of walnut kernels or pine nuts in the oven at 180 °C for 5–7 minutes and scatter them over the finished pasta before serving.
