- 250 g couscous
- 1 tbsp extra virgin olive oil
- 1 tsp fine table salt
Place the couscous in a small pot or a shallow, wide bowl. Drizzle the olive oil over it, add the salt, and mix everything thoroughly with a fork until each grain is evenly coated with the oil.
Now pour 400 ml of boiling water (or a mild vegetable broth for more flavor) over the prepared couscous. Immediately cover the container with a suitable lid and let the couscous swell for 5 minutes off the heat. It is important that the steam cannot escape during this time.
Remove the lid and carefully fluff the soft couscous with a fork. Run the tines of the fork through the grains to separate them, so the side dish becomes particularly fluffy. Serve the couscous warm as a side dish or let it cool for salads.
Chef's tip
For a particularly fine touch, you can stir a small piece of butter into the warm couscous at the end.
If you use the couscous as a salad base, mix in fresh herbs like mint or parsley only after it has cooled down.
