Preparation method
Fill a large pot with plenty of water, salt it, and bring it to a boil. Once the water is boiling, add the whole wheat penne and cook according to package instructions until al dente.
Meanwhile, prepare the sauce: Halve the avocado, remove the pit, and scoop out the flesh with a spoon. Place the avocado flesh together with the peas, baby spinach, parsley, lemon juice, finely grated Parmesan, chili flakes, and milk into a blender or food processor.
Blend everything into a perfectly smooth, creamy sauce. Season with salt and pepper. Important: Do not heat the sauce, as the avocado and cheese could change its color and consistency.
Chef's tip
The sauce should not be cooked – the residual heat from the pasta is completely sufficient to bring the dish to a pleasant temperature without the avocado turning bitter.
