Clean the mushrooms, trim the ends of the stems, and slice the mushrooms.
For the pesto, place the spinach (or arugula), walnuts, almonds, most of the olive oil (approx. 70 g), garlic, coarsely grated cheese (reserve some for garnish), lime juice, lime zest, and a pinch of salt into a blender.
Blend the ingredients into a pesto. It doesn't have to be completely smooth; a slightly coarse texture provides a nicer bite.
Chef's tip
For a more intense aroma, you can briefly toast the nuts in a dry pan before blending.
