- 50 g fresh basil
- 2 cloves fresh garlic
- 100 ml extra virgin olive oil
- 70 g Parmigiano Reggiano DOP
- 30 g Pecorino cheese in one piece
- 1 pinch fine salt

Carefully clean the basil leaves with a cloth (do not wash to preserve the aroma). Peel the garlic and finely grate the cheeses.

Place all ingredients in a blender and blend until the desired creamy consistency of the pesto is achieved. Serve immediately or transfer to a jar and cover with a layer of olive oil.
Chef's tip
For an even more intense aroma, you can briefly toast the pine nuts (if added) in a dry pan until golden brown. The pesto will keep in the refrigerator for several days if it is always well covered with olive oil.
