Ingredients

  • 250 g Quark
  • 150 g Wholemeal spelt flour
  • 1 pc. Egg
  • 300 g Plum compote
  • 30 g Stevia powder
  • 30 g Ground poppy seeds
  • 1 tsp Ground cinnamon
  • 20 g Butter

Method

    Mix quark, egg, and wholemeal spelt flour on a work surface. Knead the dough smooth with your hands and divide it into 4 parts. Form each part into a roll, cut it into small pieces, and shape them into elongated dumplings (Schupfnudeln).

    Bring a pot with approx. 2 liters of lightly salted water to a boil. Once the water boils, add the dumplings and reduce the heat. Let the dumplings simmer for approx. 2-3 minutes (depending on size). When they float to the surface, they are ready and can be removed with a slotted spoon. Pour melted butter over the hot dumplings and sprinkle with ground poppy seeds and stevia.

    Gently simmer the plum compote in a small pot for approx. 10 minutes and season with a little stevia and cinnamon if needed. Serve the quark dumplings together with the warm plum compote.
