Preparation method
Take the whipping cream out of the refrigerator and let it stand at room temperature for a short time. Mix with the cream stabilizer and whip on high speed until the cream is firm.
Finely chop the dried tomatoes and chives. Peel and finely grate the fresh horseradish (approx. 2-3 tbsp are needed). Carefully fold the chopped tomatoes, chives, lime juice, and grated horseradish into the whipped cream. Season with Himalayan salt and white pepper.
Wash the cucumber and slice it lengthwise into approx. 6-8 wafer-thin, wide strips using a peeler.
Chef's tip
These ham rolls are an ideal cold appetizer classic for festive occasions such as Christmas or New Year's Eve. For a particularly elegant look, you can pipe the mousse into the ham rolls using a star nozzle.
