Separate the garlic bulbs into individual cloves, but be sure to leave them in their skins.

Place the cloves in a small pot and cover with olive oil until completely submerged. Heat the oil over medium heat to approx. 90 °C. Once the temperature is reached, remove the pot from the heat and let the garlic cool completely in the oil. Transfer everything to a clean, sealable jar.
Chef's tip
Confit garlic loses its pungency and becomes wonderfully creamy. Simply squeeze the cloves out of their skins and use them for sauces, mashed potatoes, or herb butter. The flavored oil is also a highlight in the kitchen!
