Preparation method

1

Prepare the apples: Wash, peel, core, and cut the apples into bite-sized, thin wedges. Melt 20 g of butter in a pan, add the apple wedges along with 20 g of granulated sugar, vanilla sugar, and cinnamon, and sauté over medium heat for about 5 minutes until lightly caramelized and soft, but still firm to the bite. Set aside.

2

Toast the semolina: In a second large, heavy pan (or cast-iron skillet), toast the soft wheat semolina dry without fat over medium heat, stirring constantly, until slowly golden yellow and pleasantly nutty in aroma.

3

Boil milk & scald the semolina: Meanwhile, bring the whole milk to a boil with 20 g of butter, the remaining 30 g of granulated sugar, and a pinch of salt in a small pot. Carefully pour the hot milk over the toasted semolina in the pan while stirring vigorously. Immediately reduce the heat.

Chef's tip

For a particularly rustic flavour, the sterz can be baked in the oven at 180 °C for 10 minutes after folding in the apples – this creates a wonderful, crispy crust.

A glass of cold whole milk or a refreshing apple or plum compote pairs excellently with it.
