Preparation method
Preparation of the Croquettes
Preheat the oven to 170 °C top/bottom heat. Peel the potatoes, cut them into small cubes, and boil them in salted water for about 15 minutes until soft. Set aside a pinch of salt for the dip.
Drain the potatoes and mash or blend them finely until a smooth mixture is formed. Transfer to a bowl and add the grated Cheddar and corn breadcrumbs. Knead everything into a compact dough. If the dough is too soft, add a little more breadcrumbs.
Form small balls (approx. 2–2.5 cm diameter) from the dough. Roll each ball in sesame until it is evenly coated.
Chef's tip
For a particularly intense aroma, use a mixture of light and black sesame. The croquettes also taste excellent as a side dish to grilled meat or a fresh salad.
