- 250g Flour Type 405
- 400ml Fresh Milk
- 5 Eggs
- 50g Sugar
- 50g Butter
- 2 tbsp Powdered Sugar
- Salt

Instructions
- 1Separate the eggs. Mix the egg yolks with milk, raisins, sugar, flour, and salt to form a smooth batter. Beat the egg whites until stiff and carefully fold the stiffly beaten egg whites into the batter.
- 2Heat butter in a large pan, pour in the batter, and fry the Kaiserschmarrn batter on both sides first.
- 3Preheat the oven to 180 °C. Then bake the Kaiserschmarrn with the pan for about 10 minutes until golden brown.
- 4Remove the pan from the oven and tear the baked Kaiserschmarrn pancake into small, bite-sized pieces. Then bake again for 2 minutes in the oven. Afterwards, sprinkle the Kaiserschmarrn with powdered sugar and serve.
- 5Garnish your Kaiserschmarrn with plum compote or apple sauce if you like it extra sweet.
