Preparation method
Peel the potatoes, cut them into equally sized pieces, and place them in a pot. Cover with water until they are about 2 cm high. Add a teaspoon of salt and cook until tender, covered.
Drain the tender potatoes and let them steam off briefly. Then press them through a potato ricer or mash them finely with a masher in a clean pot.
In a small pot, melt the butter until it is hot. In a second pot, briefly bring the whipping cream to a boil. Remove both from the heat.
Chef's tip
Stirring over low heat evaporates residual moisture, intensifying the flavor. Always use a whisk for a particularly airy consistency. If the puree is too firm, simply add another splash of hot whipping cream or milk.
