- 40 g flat-leaf parsley (1 bunch)
- 30 g walnuts
- 90 ml extra virgin olive oil
- 1 garlic clove
- 1 tbsp lemon juice
- 30 g Parmesan (grated)
- 1 pinch salt

Pluck the parsley leaves and place them in a blender along with the walnuts, garlic clove, and grated Parmesan. Process everything to the finest possible consistency.

Then add the olive oil and lemon juice. Blend again briefly until a homogeneous mixture is formed, and season with a pinch of salt.
Chef's tip
The pesto tastes excellent on fresh sourdough bread or as a crust for salmon. Simply spread a spoonful of pesto onto the salmon fillet and bake in the oven at 200 °C for about 12 minutes.
