Heat a large pan over medium heat and grease with a little butter. Place the buckwheat galette with the darker side down in the pan.

Immediately crack an egg into the center of the galette. Carefully spread the egg white a little with a spoon or spatula, making sure the yolk remains intact and stays in the center.

Sprinkle the grated Gruyère cheese evenly around the yolk. Tear the ham into coarse pieces and distribute them over the galette as well.
Chef's tip
For an extra crispy galette, you can place tiny flakes of butter on the edges before folding. If you prefer the yolk firm, prick it briefly after cracking the egg.
