- 40 g Fresh chives

- 1 tbsp Vegetable oil
- 1 pinch Fine iodized table salt
- 1 pinch Ground black pepper

Wash the chives, shake dry, and cut into fine rolls.

Whisk the eggs in a bowl. Add the chopped chives, a pinch of salt, and pepper. Whisk everything well with a whisk or a fork.

Heat some vegetable oil in a pan over medium to high heat. Pour the egg mixture into the pan and spread evenly by swirling. Once the edges are firm, carefully flip or fold the omelette. Continue cooking until the mixture is fully set but still juicy. Serve hot.
Chef's tip
For an extra fluffy result, you can add a splash of mineral water or cream to the egg mixture.
