Preparation method

Preparation

1

Briefly whisk the eggs in a bowl with a fork and season with a small pinch of fine salt and freshly ground pepper. Cut the fresh chives into fine rings. Have the farmhouse bread slices ready or toast them briefly in the preheated oven if desired.

Roasting cracklings & preparing scrambled eggs

2

Heat a pan over medium heat and melt the butter in it. Add the cracklings and fry gently for 2 to 3 minutes while stirring, until they release their wonderful aroma and become beautifully crispy.

3

Reduce the heat to low. Pour the whisked eggs over the crispy cracklings into the pan. Using a wooden spoon or spatula, slowly push the mixture from the edge of the pan toward the center until it sets, but still glistens wonderfully creamy and moist. Remove the pan from the heat immediately, as the eggs will continue to cook from the residual heat.

Chef's tip

For the best flavor experience, do not let the pan get too hot so that the eggs stay nicely moist and soft. For an even more rustic touch, rub the farmhouse bread with a little garlic before toasting it in the oven.
