Preparation
Rinse the jasmine rice thoroughly in a sieve until the water runs clear. Bring to the boil with 1.5 times the amount of lightly salted water, cover, and let simmer over low heat for about 12 minutes. Then keep warm in a preheated oven at 60 °C.
Pat the prawns dry and roughly cut into bite-sized pieces (leave a few prawns whole for presentation). Wash the spring onions and slice into thin rings. Roughly pick the fresh coriander leaves and quarter the lime.
Whisking the omelette mixture
Crack the eggs into a bowl. Stir the cornstarch with the fish sauce and light soy sauce until smooth, then add to the eggs. Whisk everything vigorously with a fork or whisk for at least 1 minute until frothy – this makes the omelette particularly fluffy when frying and allows it to puff up perfectly.
Chef's tip
The secret to perfect puffing: The oil must be very hot and the egg mixture vigorously beaten. The cornstarch gives the edges that typically Thai, inimitable crispiness.
Traditionally served with Thai Sriracha sauce or spicy Prik Nam Pla (chopped chillies in fish sauce with a squeeze of lime juice).
