Cook the jasmine rice in lightly salted water according to the package instructions, then keep warm.
Rinse the cod fillets under cold water, pat thoroughly dry with paper towels, and cut into pieces of about 4–5 cm. Season lightly with 1 pinch of pepper and a dash of fish sauce.
Wash the tomatoes and cut them into small cubes. Peel and finely chop the garlic. Wash the spring onions and slice into thin rings, keeping the white and green parts separate. Wash the dill and pluck coarsely.
Chef's tip
Ripe tomatoes: Use particularly ripe, aromatic tomatoes – the sweeter and more sun-ripened the fruit, the more flavourful the Vietnamese sauce will be.
Gentle cooking: White fish cooks very quickly. Make sure not to let the fish pieces cook in the sauce for too long so the flesh remains nice, juicy, and flaky.
