Cook the mie noodles in boiling salted water according to the package instructions until al dente, rinse under cold water, drain well, and set aside.
For the yakisoba sauce, whisk together the Worcestershire sauce, oyster sauce, soy sauce, tomato ketchup, cane sugar, and sesame oil in a small bowl until smooth and the sugar has completely dissolved.
Cut the boneless chicken thighs into bite-sized strips. Clean the white cabbage and cut or shave into fine strips. Peel the carrot and cut into fine matchsticks. Wash the spring onions, slicing the white parts into rings and the green parts diagonally into strips. Finely chop the garlic and ginger.
Chef's tip
For more intense roasted aromas, sear the chicken and vegetables in batches over the highest possible heat so that the vegetables remain crisp.
Serve with some Japanese seven-spice chili (Shichimi Togarashi) or pickled red ginger (Beni Shoga) to taste.
