- 500 g white bread or rolls
- 2 ks free-range eggs M
- 1 ks onion
- 500 ml whole milk 3.5% fat
- 3 ks wheat flour
- 1 ks unsalted butter
- 1 ks fresh flat-leaf parsley
- 1 ks ground nutmeg
- 1 ks fine table salt
- 1 ks ground black pepper
Method
- 1First, cut the white bread into thin slices or small cubes. Warm the milk and pour it over the cubes, letting it soak in for a few minutes.
- 2Next, whisk the eggs and finely chop the parsley. Then knead the eggs, parsley, salt, pepper, and nutmeg into the soaked mixture – this works best with damp, cold hands.
- 3Now, finely chop the onion and sauté it with butter, then add it to the dumpling mixture as well.
- 4Now you can form dumplings of any desired size with damp hands and roll them in flour.
- 5Finally, cook the formed dumplings in salted water for 15 to 20 minutes, depending on their size, until they float to the surface. Then you can remove them and enjoy.
- 6If you want to make bacon dumplings, simply add diced bacon to the dumpling mixture.
