  • 500 g white bread or rolls
  • 2 ks free-range eggs M
  • 1 ks onion
  • 500 ml whole milk 3.5% fat
  • 3 ks wheat flour
  • 1 ks unsalted butter
  • 1 ks fresh flat-leaf parsley
  • 1 ks ground nutmeg
  • 1 ks fine table salt
  • 1 ks ground black pepper

Method

    First, cut the white bread into thin slices or small cubes. Warm the milk and pour it over the cubes, letting it soak in for a few minutes.

    Next, whisk the eggs and finely chop the parsley. Then knead the eggs, parsley, salt, pepper, and nutmeg into the soaked mixture – this works best with damp, cold hands.

    Now, finely chop the onion and sauté it with butter, then add it to the dumpling mixture as well.

    Now you can form dumplings of any desired size with damp hands and roll them in flour.

    Finally, cook the formed dumplings in salted water for 15 to 20 minutes, depending on their size, until they float to the surface. Then you can remove them and enjoy.

    If you want to make bacon dumplings, simply add diced bacon to the dumpling mixture.
