Ingredients

  • 120 g bread cubes
  • 20 g finely diced onion
  • 30 g butter
  • 3 pcs free-range eggs M
  • 1 pinch ground black pepper
  • 1 pinch fine table salt

Method

    Cut the bread dumplings (or bread cubes) into cubes of approx. 1 cm. Beat the eggs in a bowl, whisk with a fork, and season with salt and pepper.

    Melt the butter in a pan over medium heat. Add the dumpling cubes and fry for approx. 1 minute. Add the finely diced onion, mix everything well, and roast until golden brown, stirring occasionally.

    Pour the whisked eggs over the dumplings, mix thoroughly, and immediately remove the pan from the heat. The residual heat from the pan will perfectly set the eggs without drying them out. Season again with salt and freshly ground pepper if needed.

    Sprinkle the roasted dumplings with freshly chopped parsley or chives as desired. Pickled gherkins or a fresh green salad are an excellent accompaniment.
