Briefly rinse the turkey legs under cold running water, pat thoroughly dry with paper towels, and lightly score the skin in a diamond pattern so the seasonings can penetrate deeply.
For the BBQ dry rub, mix smoked paprika powder, cane sugar, garlic powder, fine salt, and ground black pepper in a bowl. First rub the turkey legs with vegetable oil and then massage generously all over with the spice mixture.
Grilling & Glazing
Prepare the grill for indirect heat at approx. 140–150 °C (if not using a kettle grill or smoker, preheat the oven to 150 °C top/bottom heat). Place the seasoned turkey legs in the indirect grilling zone (or on a baking sheet lined with baking paper in the oven) and cook slowly with the lid closed for about 60 minutes.
Chef's tip
For an even more intense smoky flavor on a charcoal grill or smoker, place a handful of soaked wood chips (e.g. apple or hickory wood) onto the embers.
If the meat gets too dark during cooking in the oven, cover the legs loosely with some aluminum foil for the final 15 minutes.
