Remove the meat from the refrigerator one hour before preparation so that it reaches room temperature. Lightly salt the steaks and drizzle with a little olive oil.

Preheat the grill to 200–300 °C.

Place the steaks on the hot grill. Only turn them when the meat easily detaches from the grate. For a medium steak, aim for a core temperature of approx. 55 °C (at 230 °C grill temperature, this takes about 12 minutes).
Chef's tip
Use a meat thermometer to achieve the perfect doneness: 52-54 °C for rare, 55-58 °C for medium.
