Ingredients
- 675 g Cucumber
- 150 g Small yellow onion
- 100 g Red bell pepper
- 40 g Fine salt
- 120 ml Apple cider vinegar
- 150 g Granulated sugar
- 4 g Cornstarch
- 1 tsp Mustard
- 1 pinch Turmeric powder
- 1 pinch Nutmeg
- 1 pinch Ground pepper
Preparation
- 1Cut the cucumbers, onions, and red bell pepper into very fine cubes. Mix with the salt in a large bowl. Cover the bowl and let it sit in the refrigerator for 24 hours.
- 2After the resting period, place the vegetables in a fine sieve, rinse thoroughly with cold water, and drain well. Squeeze out any remaining liquid firmly.
- 3In a saucepan, whisk the cornstarch smoothly with the apple cider vinegar. Add granulated sugar, mustard, turmeric, nutmeg, and pepper. Bring to a boil over medium heat. Once the marinade becomes clear, add the vegetables and simmer for 10 minutes. Fill into clean jars and seal.
