  • 675 g cucumber
  • 150 g small yellow onion
  • 100 g red bell pepper
  • 40 g fine salt
  • 120 ml apple cider vinegar
  • 150 g granulated sugar
  • 4 g cornstarch
  • 1 tsp mustard
  • 1 pinch turmeric powder
  • 1 pinch nutmeg
  • 1 pinch ground pepper

Cut the cucumbers, onions, and red bell pepper into very fine cubes. Mix with the salt in a large bowl. Cover the bowl and let it sit in the refrigerator for 24 hours.

After the resting time, place the vegetables in a fine sieve, rinse thoroughly with cold water, and drain well. Squeeze out the remaining liquid firmly.

In a pot, stir the cornstarch with the apple cider vinegar until smooth. Add the granulated sugar, mustard, turmeric, nutmeg, and pepper. Bring to a boil over medium heat. As soon as the marinade becomes clear, add the vegetables and simmer for 10 minutes. Pour into clean jars and seal.
