PREPARATION OF CORIANDER BUTTER

Peel and finely press the garlic.

Melt the butter in a small saucepan, add the garlic and lemon zest. Sauté the garlic briefly over low heat – it should not brown! Remove the saucepan from the heat and stir in the finely chopped coriander.

PREPARATION OF CORN

Bring about 3 liters of water to a boil in a large pot with salt and sugar. Add the corn cobs and cook covered for about 30 minutes. Turn the cobs occasionally during cooking. Drain the cooked corn thoroughly in a sieve.

Chef's tip

For a particularly intense aroma, use organic lemons and freshly harvested coriander.
