Preparation method

Finely dice the red onions. Peel the garlic, halve it, remove the germ, and finely grate or press it. Deseed the chili pepper and finely chop it as well.

Quarter the tomatoes, remove the hard stem and seeds. Cut the flesh into small cubes.

In a bowl, mix the diced onions with red wine vinegar, lemon juice, and garlic. Add the diced tomatoes, the finely chopped herbs (parsley, basil, thyme), and the olive oil.
Chef's tip
The salsa tastes best if it can rest in the refrigerator for about 30 minutes for the flavors to fully develop.
