SKEWERS
- 250 g Cherry tomatoes
- 250 g Red bell pepper
- 250 g Red onions
- 300 g Zucchini
MARINADE
- 75 ml Olive oil
- 35 ml Lemon juice
- 4 cloves Fresh garlic
- 1 handful Fresh mixed herbs
- 1 pinch Fine salt
- 1 pinch Ground pepper
Preparation
- 1Wash the vegetables thoroughly. Core the bell peppers and cut them, along with the zucchini and red onions, into roughly equal-sized, bite-sized pieces. Leave the cherry tomatoes whole. Thread everything alternately onto grilling skewers.
- 2For the marinade, mix the olive oil with the lemon juice, pressed garlic, and finely chopped herbs (e.g., thyme, rosemary, oregano). Season generously with salt and freshly ground pepper.
- 3Brush the skewers generously with the marinade. Grill on a hot grill over medium heat for about 15 minutes, until the vegetables are al dente and lightly browned. Turn the skewers regularly and brush repeatedly with the remaining marinade.
Tip
If using wooden skewers, soak them in cold water for about 30 minutes beforehand to prevent them from burning on the grill.
For even more variety, you can also thread mushrooms, corn on the cob pieces, or halloumi cubes onto the skewers.
