Pluck the leaves from the herb sprigs (mint, oregano, thyme) and chop them finely. Soak the wooden skewers in cold water for about 10 minutes to prevent them from burning on the grill.

Cut the pork into cubes of approx. 3 cm. In a bowl, mix with the chopped herbs, 3 tbsp olive oil, a pinch of salt and pepper. Cover the meat and let it marinate in the refrigerator for at least 2 hours.
Grilling & Serving

Remove the meat from the marinade and thread it evenly onto the soaked wooden skewers. Halve the lemon.
Chef's tip
Serve the souvlaki traditionally with pita bread, tzatziki, and a fresh Greek salad.
