  • 2 pcs Spring chicken
  • 2 tbsp Extra virgin olive oil
MARINADE
  • 15 g Red chili pepper
  • 100 ml Lemon juice
  • 2 tsp Chili flakes
  • 1 tbsp Fresh thyme
  • 1 tbsp Fresh rosemary
  • 4 pcs Dried bay leaves
  • 1 tbsp White wine vinegar
  • 1 pinch Ground black pepper
  • 1/2 tsp Fine iodized table salt

Preparation of the Marinade

Finely chop the fresh chili pepper and coarsely crush the dried chili flakes. Thoroughly mix all ingredients for the marinade in a bowl.

Marinating and Grilling

Cut the spring chickens along the backbone and open them up like a book (butterfly cut). Generously rub the chickens with the marinade and let them marinate in the refrigerator for at least 3 hours, preferably overnight.

Remove the spring chickens from the marinade and place them skin-side down on the hot grill. Close the lid and grill for 3 minutes. Then flip them, close the lid again, and grill for another 3 minutes. Repeat this process until the meat is tender and cooked through.
