Preparation & frying the bacon

Preheat the oven to 200 °C top/bottom heat. Place the farmhouse bread on a baking sheet lined with baking paper. Cut the mountain cheese into thin strips or cubes. Finely chop the chives.

Cut the bacon into bite-sized strips. Melt the butter in an ovenproof skillet over medium heat and slowly fry the bacon until crispy.

Letting cheese & eggs set

Briefly whisk the eggs in a bowl with a little caraway seeds and a pinch of salt and pepper using a fork, but do not beat until frothy.

Chef's tip

For the traditional alpine experience, Carinthian Frigga is served directly in a cast-iron skillet, which retains heat for a particularly long time.

If you prefer it even heartier, you can replace part of the mountain cheese with mature Gailtaler Almkäse.
