Ingredients for Choripán & Chimichurri
- 2 medium tomatoes
- 1/2 red bell pepper (seeded and finely diced)
- 1/2 red onions (finely diced)
- 4 tbsp extra virgin olive oil (for salsa and sauce)
- 3 tbsp red wine vinegar (for salsa and sauce)
- 4 chorizo sausages
- 4 baguettes
- 1 bunch fresh parsley (chopped)
- 2 cloves fresh garlic (pressed)
- 1 tsp dried oregano
- 1/2 tsp chili flakes
Preparation of the Salsa & Sauce
- 1Quarter the tomatoes, remove the seeds with a spoon, and finely dice the flesh. Place in a bowl.
- 2Add bell pepper, red onions, 2 tbsp of olive oil, and 1 tbsp of red wine vinegar to the tomatoes. Season well and mix everything.
- 3For the Chimichurri sauce, mix the remaining ingredients (parsley, garlic, oregano, chili flakes, remaining 2 tbsp oil, and 2 tbsp vinegar) in a bowl until well combined. Ideally, let it steep for 1 hour.
Grilling & Serving
- 1Meanwhile, preheat a grill pan or grill to medium heat. Grill the chorizo sausages, turning frequently, for about 10 minutes until cooked through.
- 2Slice the baguettes lengthwise (do not cut all the way through) and grill with the cut side down for about 2 minutes. Place the chorizos in the baguettes and garnish generously with Chimichurri and the tomato salsa.
