- 1 pc fresh pineapple
- 200 ml orange juice
- 50 ml Metaxa 5*
- 2 tbsp granulated sugar
- 1 pc cinnamon stick
- 1 handful brown cane sugar for rolling

Peel the pineapple and cut it into slices of equal thickness. Remove the hard core in the middle with a round cutter. Roll the pineapple rings in brown cane sugar and grill them golden brown on both sides.

In a pan, lightly caramelize the granulated sugar. Pour in the orange juice, add the cinnamon stick, and stir until the sugar has completely dissolved. Add the grilled pineapple slices, reduce the liquid by about one third, pour Metaxa over them, and carefully flambé.
Chef's tip
Serve the flambéed pineapple immediately while it is still warm, along with a scoop of vanilla ice cream. The contrast between hot fruit and cold ice cream is a true delight!
