Preparation method

Preheat the oven to 190 °C top/bottom heat. Cut the Grenaille potatoes into smaller pieces and place them on a baking sheet. Drizzle with 1 tbsp olive oil, season with salt and mix well. Bake in the preheated oven for about 20 minutes until the potatoes are crispy and roasted brown.

Tear the toast bread into small pieces and place in a bowl together with the finely chopped red onion, chopped parsley, zest of ¼ lemon, egg, 40 ml water and a little salt. Mix everything together and add the minced beef. Knead thoroughly into a compact mixture. Divide the mixture into 6 equal portions. Cut the feta into thick, short strips.

Shape one portion of the meat mixture into a patty, place a piece of feta in the middle and wrap the meat tightly around the cheese to form an oval roll. Grill on a hot contact or outdoor grill for about 3 minutes on each side until golden brown.

Chef's tip

To prevent the meat from sticking to your hands when shaping the bifteki, lightly moisten your hands with cold water.

The tzatziki will taste even more intense if left in the fridge for about 15 to 30 minutes before serving to let the flavours infuse.
