First, marinate the egg yolks. Separate the yolks from the egg whites and place them in a small bowl. Mix the soy sauce with 3 tbsp of water and pour the mixture over the yolks until they are almost completely covered. Let them marinate in the refrigerator for at least 2 hours.

Wash the potatoes, but do not peel them. With a sharp knife, make deep cuts at regular intervals of a few millimeters (Hasselback style). In an oven-safe pan, melt the lard and toss the potatoes in it until they are covered with fat everywhere. Salt them and bake uncovered in a preheated oven at 200°C (top/bottom heat) for approx. 50 minutes.

Cut off the tips of the garlic so that the cloves are slightly exposed. Wrap each bulb individually in aluminum foil and add them to the oven with the potatoes.
