CORIANDER BUTTER

  • 50 g unsalted butter
  • 15 g fresh garlic
  • 2 tbsp fresh coriander
  • 2 tsp lemon zest

CORN

  • 4 corn cobs
  • 2 tbsp vegetable oil
  • 60 g sugar
  • 60 g fine salt

PREPARATION OF CORIANDER BUTTER

    Peel and finely press the garlic.

    In a small saucepan, melt the butter, add the garlic and lemon zest. Sauté the garlic briefly over low heat – it should not brown! Remove the saucepan from the heat and stir in the finely chopped coriander.

PREPARATION OF CORN

    In a large pot, bring about 3 liters of water with salt and sugar to a boil. Add the corn cobs and cook covered for about 30 minutes. Turn the cobs occasionally during cooking. Drain the cooked corn thoroughly in a sieve.

    In a pan, heat the oil over high heat and brown the corn cobs on all sides until golden. Then pour the prepared coriander butter over them and serve immediately.
Tip
For a particularly intense aroma, use organic lemons and freshly harvested coriander.
