First, prepare the vegetable mixture. Place all ingredients except the olive oil in a food processor or electric chopper and finely grind until a malleable mass is formed.

Then heat 2 tablespoons of olive oil in a pan over medium heat. Form flat patties from the vegetable mixture with your hands, in a schnitzel or patty shape.

Fry the vegetable schnitzels in the hot pan over medium heat for about 2-3 minutes on each side until golden brown and crispy.
Chef's tip
Serve the vegetable schnitzels with a dip made from sour cream and freshly chopped chives for an extra fresh touch.
