Spicy Mayonnaise

  • 80 g Mayonnaise
  • 10 ml Sriracha sauce
  • 24 g lemon juice
  • 15 ml soy sauce

Fresh Herb Salad

  • 100 g iceberg lettuce
  • 15 g unsalted peanuts
  • 10 g red onions
  • 10 g shallots
  • 6 leaves fresh mint
  • 20 g fresh coriander

Sandwich Base

  • 300 g chicken thighs (boneless, with skin)
  • 4 pieces Kaiser rolls
  • 30 ml vegetable oil
  • 15 g unsalted butter
  • 1 pinch black pepper
  • 10 g table salt

Prepare Spicy Mayonnaise

  • 1
    Mix all ingredients for the mayonnaise well in a small bowl and chill in the refrigerator until ready to use.

Prepare Herb Salad

    Cut the iceberg lettuce and mint leaves into fine strips. Roughly chop the peanuts, finely dice the onions and shallots. Combine everything in a bowl with the chopped coriander.

Fry Chicken and Assemble Sandwich

    Preheat the oven to 180 °C (top/bottom heat).

    Season the chicken thighs with salt and pepper on both sides. Heat the vegetable oil in a pan over medium heat. Sear the meat first on the skin side for approx. 3 minutes, then turn and continue frying for 1 minute. Transfer the meat to an ovenproof dish and finish cooking in the preheated oven for approx. 6 minutes.

    Remove the meat from the oven and let it rest on a plate for approx. 5 minutes. Then halve each piece of meat.

    Horizontally slice the Kaiser rolls, spread butter on the cut surfaces, and toast them golden brown in a pan. Generously spread the Sriracha mayonnaise on the toasted roll halves. Place a piece of chicken and a portion of salad on the bottom half, then top with the upper roll half. Serve immediately.

Tipp: Für eine extra knusprige Haut das Hendl in der Pfanne mit einem schweren Deckel oder einer zweiten Pfanne beschweren. So wird die Haut gleichmäßig goldbraun und kross!
