Preparation method
Preparation & oven roasting
Preheat the oven to 200 °C top/bottom heat and line a baking sheet with baking paper.
Clean the savoy cabbage, remove the tough core, and cut the leaves into bite-sized pieces. Rinse the chickpeas in a sieve under cold water and drain well.
Spread the savoy cabbage and chickpeas on the baking sheet and mix thoroughly with 2 tbsp extra virgin olive oil, ground cumin, and some salt and pepper. Roast in the preheated oven for approx. 15–20 minutes until the savoy cabbage is crispy at the edges and lightly browned.
Chef's tip
For an extra oriental touch, you can sprinkle a pinch of sumac or za'atar over the feta before serving.
The salad tastes best served lukewarm straight from the oven, but is also ideal for meal prep the next day at the office.
