Gurkerl Küche
Knusprig gebackene Bauernbrotscheiben mit würzigem Erdäpfelkas und zart schmelzendem Bergkäse gratiniert – die perfekte herzhafte Jause aus dem Backrohr.
Preparation method
Preparation & Cooking
Thoroughly wash the floury potatoes and boil them in plenty of salted water until tender. Then peel while still hot and press through a potato ricer into a bowl or mash finely. Allow to cool completely.
Preheat the oven to 200 °C top/bottom heat (or 180 °C convection). Line a baking sheet with parchment paper.
Finely chop the onion and garlic clove. Slice the chives into thin rolls (set aside a quarter for garnish later). Coarsely grate the mountain cheese.
Chef's tip
For an especially savory note, a robust Vorarlberg or Tyrolean mountain cheese aged for at least 6 months is ideal.
Leftover potatoes: If you have boiled potatoes left over from the day before, this savory snack can be whipped up in less than 20 minutes!
