Prepare Dough

First, pour 370 ml of ice-cold water into the mixing bowl of the food processor. Then add the plain flour and balsamic glaze and stir slowly for 3 minutes.

Crumble in the fresh yeast and knead vigorously on the highest setting for 7 minutes until a sticky, moist dough forms.

Add salt and 15 ml of olive oil and knead for another 3 minutes on the highest setting. The dough will remain sticky but will gradually begin to pull away from the sides of the bowl.
Chef's tip
The water must be really ice-cold! It's best to chill it in the refrigerator overnight or use ice cubes (strain before measuring). This prevents the dough from getting too warm during rapid kneading.
