Prepare the Batter

Preheat the oven to 180 °C. In a bowl, mix cornmeal, wheat flour, baking powder, and a pinch of salt.

In a second bowl, whisk together buttermilk, eggs, melted butter, and maple syrup. Add the wet ingredients to the dry ingredients and stir briefly.

Fold in the grated Cheddar and finely chopped jalapeños.
