Ingredients
- 1 piece avocado (ripe)
- 1 tsp fresh mint
- 50 g radishes
- 30 g celery stalks
- 20 g spring onions
- 2 slices whole grain bread
- 2 pieces free-range eggs
- 1 pinch salt
- 1 pinch pepper
For Garnish
- 1 handful garden cress
Preparation of the Avocado Mixture
- 1Halve the avocado, remove the pit, scoop the flesh from the skin, and cut into small cubes. Slice the radishes into fine rounds and the celery into small cubes as well. Roughly chop the mint and finely slice the spring onions into rings.
- 2Then, carefully combine all prepared ingredients in a bowl. Season the mixture with salt and pepper and let it chill in the refrigerator until ready to use.
Frying Eggs & Toasting Bread
- 1For the fried eggs, heat some oil in a pan. Carefully crack the eggs into the pan and fry over medium heat for about 5 minutes until the egg white is set. For a runny yolk, cover the pan with a lid. If you prefer a firm yolk, cook the eggs for another 3 minutes.
- 2In parallel, toast the whole grain bread slices until golden brown in a toaster or a fat-free pan.
Serving
- 1Generously top the toasted bread slices with the avocado-vegetable mixture. Place a fried egg on each and sprinkle with a handful of fresh garden cress before serving. Enjoy healthy and delicious!
Tip
For an extra spicy note, you can rub the bread with a halved garlic clove before topping.
