Preparation method
Preparation of the Avocado Mixture
Halve the avocado, remove the pit, scoop the flesh from the skin, and cut into small cubes. Slice the radishes into fine rounds and the celery stalks into small cubes as well. Roughly chop the mint and finely slice the spring onions into rings.
Then, carefully mix all prepared ingredients in a bowl. Season the mixture with salt and pepper and let it chill in the refrigerator until ready to use.
Frying Eggs & Toasting Bread
For the fried eggs, heat some oil in a pan. Carefully crack the eggs into the pan and fry over medium heat for about 5 minutes until the egg white is set. For a runny yolk, cover the pan with a lid. If you prefer a firm yolk, cook the eggs for another 3 minutes.
Chef's tip
For an extra spicy note, you can rub the bread with a halved garlic clove before topping.
