Preparation method
Pour the lukewarm whole milk into the bowl of a food processor, crumble in the fresh yeast, and add the remaining ingredients (wheat flour, soft butter, caster sugar, and table salt). Knead with the dough hook until a smooth, elastic dough forms.
Lightly flour the work surface and turn the dough out onto it. Form into a ball with your hands, place in a bowl, cover with a clean kitchen towel, and let rise in a warm place for about 1 hour, until its volume has doubled.
Form the risen dough into a roll and divide into 12 equal pieces. Form each piece into a smooth ball and place them with sufficient space apart on a baking sheet lined with baking paper.
Chef's tip
For scoring, it's best to use a very sharp knife or a razor blade so that the dough is not torn.
For a particularly shiny crust, you can lightly spray the rolls with water again immediately after baking.
