Preparation & Dough Making
Take all ingredients out of the refrigerator about an hour before preparation so that they reach room temperature. This way, the dough can be processed optimally later.
Sift the flour into a large bowl and make a well in the center. Pour in the lukewarm milk (maximum 40 °C), add the sugar, and crumble in the fresh yeast. Stir in some flour from the edge to form a thick pre-dough (Dampfl). Cover the bowl with a kitchen towel and let the pre-dough rise for about 15 minutes.
Meanwhile, clean and peel the carrots and grate them very finely. The carrots will later ensure the special juiciness of the buns.
Chef's tip
Lightly flatten the buns after rising, before they go into the oven. This way, they will rise more in width than in height during baking, which makes assembling and eating the burger easier.
