Preparation method

Wash the zucchini and grate it finely. Place the grated zucchini in a clean kitchen towel and squeeze out as much water as possible. This step is crucial for the consistency of the bread.

Finely grind the almonds (or use pre-ground almonds) and mix them with the zucchini in a bowl. Add the 3 eggs. Stir in the coconut oil (if solid, warm briefly), baking powder, pressed garlic, herbs de Provence, and salt until a smooth, rather liquid dough forms.

Line a loaf pan with baking paper and pour in the dough. Smooth the surface and sprinkle with almond flakes as desired.
