Preparation method
Prepare the Dough
Bring the buttermilk to room temperature. Pour into a large bowl and add the remaining ingredients for the dough. Roughly mix everything, transfer to a stand mixer, and knead for about 10 minutes until a smooth dough forms.
Turn the finished dough out onto a floured work surface, lightly dust with flour, and cover with a kitchen towel or cling film to prevent it from drying out. Let the dough rest for 45 minutes.
Shape and Bake
Preheat the oven to 250 °C top/bottom heat. Lightly dust a baking sheet with flour. Divide the risen dough into two equal pieces.
Chef's tip
To create steam in the oven, spray water onto the oven walls with a spray bottle during preheating until a cloud of steam forms. Then immediately slide the baking sheet in.
Instead of plain wheat flour, you can also use strong bread flour for an even more intense aroma.
