Prepare Pre-dough (Day 1)

For the pre-dough, stir 10 g of fresh yeast with 30 ml of lukewarm water until smooth.

Place 350 g of the flour into the bowl of a stand mixer. At medium speed, add the yeast mixture and another 150 ml of lukewarm water. Knead for about 5 minutes until a smooth and elastic dough forms.

Lightly grease a bowl with a little olive oil, place the dough in it, and cover with cling film. Let it proof in a warm place for 12–15 hours (preferably overnight).
Chef's tip
For an especially beautiful crust, you can place an oven-safe dish with water on the bottom of the oven – the steam ensures the perfect shine.
