Preparation method

Preparation

1

Pat the stewing beef dry and cut into approx. 3 cm cubes. Peel and finely chop the onions and garlic. Peel the carrots and potatoes and cut into bite-sized pieces. Trim the Brussels sprouts, remove any wilted outer leaves, and cut the sprouts in half.

Searing and Braising

1

Heat the clarified butter in a heavy stew pot. Sear the beef cubes vigorously on all sides in batches, remove, and set aside.

2

In the remaining cooking fat, slowly fry the chopped onions until golden brown. Briefly fry the garlic and caraway seeds until a wonderful aroma arises. Then return the meat to the pot and season with salt and freshly ground black pepper.

Chef's tip

For a particularly deep flavor, you can prepare the stew the day before. Once infused, it tastes even more aromatic on the second day.

If you prefer braising in the oven: simply place the heavy stew pot with lid into the oven at 160 °C (top/bottom heat) on the middle rack.
