Preparation & Marinating
Wash the meat, pat it dry, and place it in the freezer for approx. 2-3 hours. This will make it much easier to slice into wafer-thin pieces later.
Meanwhile, prepare the marinade. Press or finely grate the garlic and mix it with soy sauce and Worcestershire sauce. Add coarsely ground pepper, chili flakes, and possibly other favorite spices to taste.
Slice the slightly frozen meat as thinly as possible. Turn each piece individually in the marinade so that it is completely covered, and layer them in a sealable container. Marinate in the refrigerator for at least 4 hours, but preferably overnight.
Chef's tip
For the best enjoyment, cut the dried meat into bite-sized pieces. Store in an airtight container. It will last even longer if vacuum-packed in portions.
